Saithe
Saithe is also called Pollock in some areas around the world. It is part of the Cod family of species, and as such, is a rich source of protein, vitamin A, D and E, and the Omega-3 fatty acids.
It is most common in the North and North-East of the Atlantic ocean, although it is also found from the South-West corner of Greenland down towards the US. Measuring usually between 45 and 90 cm. in length (3-6 kg. in weight) when caught, Saithe can reach upwards of 110 cm. in length. Considered a very active fish, Saithe feeds on crustaceans and small fish, with the largest of the species sometimes behaving like predators. When caught fresh, the meat is of a light grey color which, when dried, turns to a very earthy brown.
Saithe is not an oily fish and is considered a low fat source of food. |
